Easy Tex-Mex Bison Taco Filling

bison-taco-filling Tacos are the original fast food from Mexico.  They're quick, easy, nutritious, and they taste heavenly.  This is the perfect recipe for parents on the go that are looking for something more than McDonalds.  Made with top quality ground bison, this is recipe provides a low fat, high protein, stick-to-your-ribs kind of meal.  And it's one your family will call for over and over. Ingredients: 1 lb. Ground Bison      Many people make this recipe with ground beef.  The problem with beef is it's so high in fat.  Using ground bison will convert this from what is usually a high fat meal to one that is really quite good for you. 1 lg. Onion      Any onion will do.  We like the sweeter varieties like Vidalia, but even a white onion will do for this recipe.  Chop the onion finely. 1 cup Cooked Rice      Again, pretty much any rice will do.  We usually just use white rice, but if you prefer brown or wild rice, have at it. 1 can Black Beans      You'll want to drain and rinse these beans before using.  And black beans add a much richer flavor than red or pintos so try to use those.  But if you already have one of the other types, use that. 1 cup Corn      Frozen sweet corn is so much better than canned corn.  Whatever you do, don't use canned corn in this recipe.  If you don't have frozen corn, leave the corn out. 1 pkg. Taco Seasoning      Schilling makes the best taco seasoning around, but if you have one of the other brands that will be fine.  You will have to add some water with the seasoning.  Follow the directions on the package.   Instructions: Start by spraying a fry pan with non-stick spray and brown the ground bison with the onion.  When the onion is translucent, add the taco seasoning, the corn, the rice and the beans.  Add the water according to the directions on the package and let the mixture cook down.  That's pretty much all there is to it. When the mixture is ready, spoon into taco shells (corn, not flour) and add lettuce, cheese, tomato, black olives, sour cream, cilantro, or whatever your family likes to eat on tacos.  These tacos lend themselves to a prepared, bottled salsa like Tapatio or Cholula much more so than fresh salsa.  You can keep a bottle of one of those in the fridge for years, so you should pick one up if you don't have one.
